This September, Pacific Marketplace will be the host of an incredible pastry showcase handcrafted by Pastry Chef Eddy Yau and his team. This exhibition will feature exciting and original desserts, some commonly known to be classic but adding unconventional yet innovative ingredients that will give the pastry an incredible local twist that will make this a unique and extraordinary occasion.
Pastry Chef Yau compares showcasing pastries to a fashion show: he considers it something that is is constantly transforming and innovating itself, varying every season and bringing new, fresh and exciting creations as the months go by.
Thus, this September, a whole new selection of pastries will be available, featuring a wide variety of flavours and styles inspired by local ingredients.
Made with the extracted juice of pandan leaves, the Pandan Gula Melaka Chiffon Cake is the ultimate result of Chef Eddy’s quest to find the perfect gula Melaka taste. The Pandan Gula Melaka Chiffon Cake embodies Singapore in every bite, and the icing on the cake is the mini gula Melaka droppers that decorate the Chiffon Cake and enhance its smoky, caramel-like flavour.
If you like fruits, there will be a broad selection of fruity pastries for you to enjoy, such as the Matcha Yuzu Lychee Entremet, which any tea lovers out there will surely love. Its recipe features tropical fruits, lychee curd as the cake base and is layered with Tangy Yuzu crème. This combination brings a sweet treat you don’t want to miss.
If you wish for an interesting and delicious mix of nuts and fruits, the Strawberry Pistachio Shortcake has a nutty and creamy taste that is complemented by fresh strawberries, bringing a sweet flavour to the mix. Also, if you’re a healthy eater, a less sugary option of this pastry will be available upon special request.
And lastly, if you possess a strong love for chocolate like Chef Yau does, you will find the Araguani Hazelnut Royaltine Entremet, featuring a mix between delicious Dark Chocolate, creamy Chocolate Milk and a crispy, nutty Hazelnut crust, irresistible.

Starting his career as a junior baker, the Malaysian Chef Eddy Yau began exploring his baking skills in a local bakery shop in his hometown. He learnt and mastered a broad variety of bread and cakes before moving to Singapore, where he would later have the great opportunity to work with renowned chefs such as Jared Gallagher and Saul Bolton.
Chef Yau loves coming up with new ideas and flavours for pastries. Ever since he joined Pan Pacific Singapore, he’s found himself as the leader of the pastry team where he re-invented the dessert selection.
Some of his creations include the Yoghurt Lemon Carrot Sponge Cake, which was quite popular during Easter, and the Fudge Cheesecake and Eclairon, which is a perfect mix between éclair and Macaroon.
All these delicious pastries new and classic will be available at Pacific Marketplace’s pâtisserie counter for dine-in or takeaway, starting the September 1st. You will be met with many sweet surprises you don’t want to miss.
