Dazzling Cafe’s Singapore flagship outlet located in the Capitol Piazza recently unveiled their latest menu by Michelin-trained chef Cliff Tan. We at SAUCEink were fortunately to be treated to their tasting event, entitled “Dazzling Day Out”, that featured pop-up tables on site at the restaurant for the day. We managed to try the eight original dishes, a signature dessert and their trademark tea-based drink. Was it dazzling enough to please our discerning palettes?
Dazzling Cafe has two outlets in Singapore at present with intentionally different interior designs, serving different menus. This newly curated menu will be exclusively available at Dazzling Cafe’s Capitol Piazza branch, which is beautifully decked out in quaint french bistro interior decor, inspired by the Tiffany colour palette.
As part of Dazzling Cafe’s upcoming brand campaign “Dazzle Someone,” the management team had decided to recreate their entire dining experience and take the regular menu at their Singapore flagship location up a notch. The new menu designed by head chef, Cliff Tan, who has trained in the two Michelin-star restaurant Le Parc Franck Putelat in France, aimed to introduce Singapore’s discerning diners to fresh and innovative dishes, such as their westernised rendition of Shrimp Paste Winglets, while also offering delectable original recipes like the Dazzling Chicken Cordon Bleu, Scallop Risotto in Prawn Miso Broth, Shredded Duck Confit and Mash, Handmade Potato Doughnut with Bratwurst Stuffing and many more.

Mozzarella Cucumber Granita Salad
The Shrimp Paste Winglets will definitely be a hit with diners as it was crispy and deliciously coated with sweet chilli sauce, which was a good balance between tangy and spicy. As for the Mozzarella Cucumber Granita Salad, it is a very beautifully plated dish that would be refreshing on a hot afternoon but not something you might want to have as a full serving if you’re ordering other courses.
In preparation for this new campaign and menu, Chef Tan and the Dazzling Cafe team travelled throughout Australia, Thailand and Taiwan, seeking inspiration for their fusion dishes and ways to provide better training for the service crew to enhance service quality.
Fregola Sarde Grande Pasta
This clearly showed up in the dishes such as the sole vegetarian Fregola Sarde Grande Pasta, made with fresh pasta imported from Italy, fresh mushrooms and topped with generous cheese shavings. Interestingly enough, the pasta is smoked and that lent a smokey, almost bacon-like flavour to the creamy sauce. It was easy to forget that it was a vegetarian dish and finish the entree without concern for the mains.Tags: cafe reviews restaurant reviews
